Easy Asian Stir Fry

This is one of my favorites! I practically lived off this meal during midterms. Taking about 25/30 minutes to prepare, this dish is ideal for your busiest days. Plus the left overs taste great! Get down to your local Trader Joes and buy the following ingredients:

  • The pre-cut asian vegetable stir fry package
  • Package of broccoli
  • package of diced onion
  • 1 lb Chicken Brest
  • your favorite rice (I recommend the express cook brown rice because it only takes 15 mins to cook)
  • Your favorite Teriyaki sauce

The first step is important! You must start cooking the rice first. If you do not then when you finish cooking the chicken and vegetables you will have to wait for the rice to finish. Don’t make this mistake! No one likes cold stir fry! Follow the instructions on the back of the rice and then move on to the next step.

Next, over medium head pour a little olive oil in your wok or a large pot. Pour the full package of asian vegetables and half of the broccoli and onion packages. Cook for about 10 minutes or until vegetables have softened.

Simultaneously, cube you chicken breast and cook it in a medium sized skillet over medium heat with a little olive oil. Roughly 6-8 minutes.

When your chicken and vegetables look about done pour in the some teriyaki sauce to your liking. Finish the cooking process and you’re ready to go!

Its time to bring the whole dish together. Get out a plate and lay down some of the rice. Then add a layer of vegetables. Top the dish off with some of the teriyaki chicken.

REHEAT INSTRUCTIONS:

The beauty of this dish is that the left overs taste just as good as the fresh meal. In a large pot over medium heat, pour all your left overs in with some additional teriyaki sauce. This is way better than using the microwave! Stir occasionally until you leftovers are all warmed up.
